Citrus Smoothie
Makes 2 Smoothies
1 1/4 Cup Coconut Milk (Not from a can)
2 Orange Juiced
1/2 Cup Frozen Pineapple
2 Cup Frozen Mango
5mg The Medicine Farm No. 30 Blend Tincture
Blend until smooth.
Vietnamese Cold Noodles
Makes 4 Servings
Sauce
1″ Thumb Ginger (Minced)
4 Cloves Garlic (Minced)
Juice of 1 Lime
3 Tbls Sugar
3 Tbls Fish Sauce
1/2 Cup Seasoned Rice Wine Vinegar
Pinch Tumeric

OPTIONAL – 2 Thai Chili Peppers (Minced) or 1/4 Tsp Crushed Red Pepper Flakes
Combine all ingredients in a bowl. Refrigerate until your ready to use.
Cold Noodles
1 Package Brown Rice Noodles Cooked and Cooled
1 Large Carrot Peeled and Julienne Cut
1 Cucumber Seeded and Julienne Cut
1 Red Bell Pepper Seeded and Julienne Cut
2 Scallions Sliced Thin
1/4 Cup Cilantro Chipped
2 Tbls Basil Chiffonade
2 Tbl Dill Chopped
Toss all ingredients in the Noodle Sauce. Top with 1 Cup of Roasted Salted Peanuts
Beignets Filled with Blackberry Calm Blend Coulis Served with a Side of Coconut Whipped Cream
Makes 10-12 2×2″ Beignets
5 Tbls Hot Water
1 Tbls Sugar
1/2 tsp Active Dry Yeast
1 Egg White
2 Tbls Milk or Non-Dairy Alternative
Pinch of Salt
1 1/2 Cup All-Purpose Flour + More for Kneading
2 tsp Butter or Non-Dairy Alternative
2 Cups Vegetable Oil For Frying ( I Used Grapeseed)
1 Cup Powdered Sugar
In a large bowl combine the water and sugar. Stir until the sugar has dissolved. Sprinkle the yeast on top. Set aside for 5 minutes. During this time the mixture should become foamy. If the mixture does not foam then start over with hot water. The foam lets you know the yeast has poofed. This is vital for the dough to rise. In a separate smaller bowl whisk together the egg white, milk, and salt until frothy (2-3 minutes). Pour the egg white mixture into the yeast mixture once the yeast mixture has foamed. With a wooden spoon slowly stir in the flour. The dough will be pretty loose at this point. Incorporate the butter into the mixture. Turn the dough out onto a floured surface. Knead the dough until smooth (5-10 minutes). The dough should be very soft but not sticky. Form the dough into a ball and place it in a clean lightly oiled bowl. Cover with a damp rag or plastic. Set aside in a warm place and let rise for 1-2 hours. The dough should double in size. Once the dough has risen, heat the oil in a deep pot to 360°F. Then divide the dough in half, and roll it out on a floured counter into a square about 6″ wide and no less than 1/4′ thick. Use a pizza wheel to cut it small squares. When the oil is at 360°, drop in 3 square of dough. Do not walk away. The first side fries for 1-2 minutes. When golden brown on one side, flip the squares using a fork and continue to fry. When that side is golden brown (about 1 minute more), remove from the oil onto a cooling rack lined with paper towels. Roll out the other half of the dough, cut into squares, and fry all the squares. While the Beignets are cooling fill a syringe or turkey baster with the Blackberry Coulis. After the Beignets have been cooling for about 5 minutes, poke the syringe into the side of the Beignets and fill them slowly with the filling. Then place the Beignets in a paper bag with powdered sugar and shake. Serve with all the extra powdered sugar piled on top and a side of Coconut Whipped Cream for dipping.
Blackberry Coulis
3/4 Cup Water
1 Lemon Juiced
Zest from 1/2 a Lemon
5 tsp Sugar
1 Pint of Blackberries.
5mg The Medicine Farm Calm Blend Hemp Extract Tincture
Place water, lemon, zest, sugar, and berries in a saucepan over medium/low heat. Cook and stir until blackberries break down, sugar dissolves, and sauce is heated through 3 to 7 minutes. Remove from heat and press sauce through a fine-mesh strainer to remove seeds. Stir in Calm Blend Tincture. Cool to room temperature, cover the bowl with plastic wrap, and refrigerate until chilled, at least 45 minutes.
Coconut Whipped Cream
1 Can of Coconut Milk or Coconut Cream (Refrigerated Overnight)
1/2 tsp Vanilla Extract
1 Tbls Maple Syrup
Add all ingredients to a bowl. Whisk until stiff peaks form. Serve immediately.
